I made this granola two years ago as a Christmas gift for co-workers and it was so delicious I’m going to make it again this year. It’s also an awesome grain free alternative for those who have an allergy. You can also omit the gluten free oats if you have a severe allergy and sub in another grain of choice. When searching out yummy winter fertility foods finding a way to include lots of nuts/seeds, healthy fats and whole grains is going to be a huge help. You can even omit the oats in the granola recipe and make hot steel cut oats and then pour this granola on top. In general, try to stick to a ‘warmer’ breakfast in the winter months because it will help to warm you up from the inside and keep blood and energy moving within your body. This will help to store and conserve well needed energy for making babies!
2 cups gluten free ( or normal) oats
1 cup quinoa (uncooked)
1 cup slivered or roughly-chopped almonds
1/4 cup honey
2 Tbsp. melted coconut oil
1 tsp. salt
1 tsp. ground cinnamon
1 cup shaved coconut
3/4 cup dried apricots
3/4 cup dried cherries or cranberries
1/4 cup flax seeds
1/4 cup sunflower seeds
*feel free to add in any other nuts/dried fruits you like!*
Preheat oven to 350.
In a large bowl, stir together oats, quinoa, almonds, honey, coconut oil, salt and cinnamon until combined.
Spread the mixture out on a foil- or parchment-lined baking sheet.
Bake for about 20 minutes, stirring once halfway.
Remove sheet and sprinkle the shaved coconut evenly over the top of the granola.
Bake for an additional 3-5 minutes (watch closely) until the coconut is toasted.
Remove and let cool, then stir in dried fruit and toss to combine.
Store in mason jars for gifts ( or eat it because you probably will!)
