Fresh ginger, cinnamon molasses cookies

INGREDIENTS:

3/4 cup coconut oil, melted
1 egg or Egg Replacer
1 cup raw brown sugar 
1/4 cup blackstrap molasses
2 cups whole wheat flour 
2 teaspoons baking soda
1 teaspoon freshly grated ginger
1 teaspoon cinnamon
1/2 teaspoon each of ground cloves,
nutmeg, and sea salt

Preheat oven to 350F.
Cream together coconut oil and raw sugar. 
Add egg or egg replacer and molasses then mix in fresh ginger, spices, baking soda and salt. 
Add in the whole wheat flour last. Mix well and if needed you may add up to 1/2 cup more flour to get a good dough consistency. Roll into walnut sized balls. 
If you’re feeling crazy, you can roll the balls in some sugar as a little frosting! 
Place balls on cookie sheet press down gently with hand to flatten. 
Bake at 350 degrees for 8-10 minutes or a bit longer (3 minutes! max) if you like them crunchy.

 

* This is obviously more of a therapeutic holiday recipe than a fertility foods / 21 day HE+LJ recipe but sometimes we all need a little sugar. Here is an alternate vegan, grain free recipe for those who are interested!
